Traditional Banana Bread

Impressive banana bread

I have just had one of those moments when you have been around the house on a Sunday and a call came in that my partners mother is going to drop in for a cuppa. With a couple of hours I have just enough time to knock up a quick and simple cake. What makes this such a simple and great cake is that all i need is a bowl, spoon and fork to get the job done. No fancy beating or tricks just great simple baking that is easy , seriously health and impressive.

  • 3/4  cup Spelt, Flour, Wholegrain
  • 3/4  cup Spelt Flour, Unbleached White
  • 1/2  cup (125g) Rapadura Sugar
  • 3  tsp Baking Powder
  • 1  pinch Salt, Fine Pink Himalayan
  • 1  tsp Mixed Spice
  • 2  whole Egg
  • 7/20  cup Macadamia Oil, Cold Pressed
  • 1/4  cup Almond Milk
  • 3  whole Banana
  • 2  tbsp Apple Cider Vinegar (with Mother)
  • 1/3  tsp Beetroot Dry Powder

How to prepare

  1. Preheat the oven to 180 degC. Grease a heavy loaf tin with a small amount of the oil and line the tine with baking paper.

  2. Sift all dry ingredients into a large mixing bowl.

  3. Whisk eggs together with a fork then add the oil, milk and Apple Cider Vinegar and roughly whisk.

  4. Pour the egg mixture into the flour mixture and and mix with a wooden spoon until well combined.

  5. Roughly mash 1 1/2 of the banana and briskly whisk it into the cake batter. Big chunks give the cake a more homely texture. Once mixes pour the cake batter into the loaf tin. Cut the other 1/2 banana in thin long strips and lay the strips over the top of the batter at a slight angle.

  6. Put the Loaf tin in the oven and bake for 40 minutes or until golden brown and a skewer can be stock in the cake and comes out of the cake clean. Once cooked remove from the oven and rest the cake in a tin on a wire rack. After 5 minutes remove from the time and leave on the wire rack to cool completely. NOTE: Do not cut while still hot as this cause the cake to collapse or be a bit stodgy.
