I raided my neighbours orange tree this week. It was loaded with oranges that are starting to carpet the ground at the base of the tree. I ate a lot. I made juice, and it was perfect. Then all these oranges made me recall an almond and orange cake I ate as a kid. It has that slight bitter sweet taste and this amazing moist texture. I remember that amazing texture and tang. Right now as I am waiting for this cake to come out of the oven and as that smell filling my lounge room, I can just feel the excitement to eat it again. This cake is going to be fantastic with raw cashew cream.

Orange Paleo Orange Cake -1I love the farmer's markets that we do around the place. There is a continuous conversation about every sort of real food culture and philosophy you can imagine. Everyone is one their journey through the would of food. When you are lucky enough to spend some time at the market's you will find some great ideas and some great ingredients. There is always somethings new and the reawakening of the old. What I have come to live these days is a life of real food. Real, whole and simple. Finally, we are at a time when real foods are no longer taboo. We can eat eggs when we like, fat is not a taboo anymore, and refined sugar finally is where we all knew it should be, nowhere to be seen, it has gone from our lives. I have not become extreme when it comes to sugar. I love something with a little sweetness. Just do not do it refined and even with the unrefined sweeteners, do it with moderation. Orange Paleo Orange Cake 2 I do not follow the paleo diet. I think it is too extreme for most of us. But at the same time, I do not see a place for the quantity of wheat that was a part of the way I ate growing up. These days I eat paleo snacks when I need a snack and do not eat wheat at all these days. I love this amazing cake. I have so much more than so many other cakes. You can taste the foods that go into it, and the texture is light and moist. Orange Paleo Orange Cake 3


  • 2  whole Orange
  • 2/3  cup Coconut Sugar
  • 11/2  cup Flour, Paleo, All Purpose
  • 2  tsp Baking Powder
  • 1/2  tsp Vanilla Powder, Pure
  • 6  whole Egg
  • 3  tbsp Apple Cider Vinegar (with Mother)

How to prepare

  1. Put the two oranges into a saucepan, cover with water and simmer on the stove for 2 hours. Remove from the water and allow to cool.

  2. Preheat the oven to 170degC and line the base of a 25cm spring form cake tin with baking powder.

  3. In a medium bowl, mix together the Flour, Paleo, All Purpose with the baking powder and vanilla powder.

  4. Put the whole oranges into a food processor with the 6 eggs, apple cider vinegar and the coconut sugar. Process for 2 minutes. The mixture will turn to a pale yellow. Add the flour mixture into the food processor with the orange blend. Process further until all well combined.

  5. Tip the Orange Paleo Cake mixture into the lined cake tin and place the tin into the oven. Bake for 40-45 minutes or until golden on the top of the cake. When cooked, allow to cool five minutes before removing the cake from the tin. Allow to cool before eating.

    A slice of this cake is delicious just as it is with tea or coffee or served with fresh Raw Cashew Cream for desert.
